Weekly Meal Plan - Feb 2020 Week 3

Homemade Pizza
- A weekly staple in our house in the winter! We make the dough in the bread maker and everyone gets to choose their own toppings. Then we let the kids sit on the living room floor and we have a family movie night.

Taco Salad
- This recipe came to me at my bridal shower almost 20 years ago and it has been a family favorite ever since. Be sure to make the homemade dressing because it makes the salad. Usually we use ground turkey but this week we'll be using ground venison since that's what we have in the freezer from my daughter's fall youth hunt.

Beans & Cornbread
- This southern/Texas staple comes from my husband's grandmother and one of our meatless meals for the week. It's the perfect meal when you need something to be ready when you get home from a long or late day. The slow cooker works for this meal but a pressure cooker (aka Instapot) really shines in getting this meal done quickly. I'll post the recipe once I write down the measurements. (I've been making it for so long that I usually just throw everything in the pot.)

Chicken Stir-fry
- Stir-fry is a quick easy meal and a great way to add veggies straight into your main dish. If you want to save time and not have to cut up fresh veggies, pick up a bag of frozen stir-fry veggies to add in.

Steak & Baked Potatoes
- My dad sends us Omaha Steaks from time to time and since it's in the upper 40's here in Colorado we're going to call it grilling weather!

Black Bean & Sweet Potato Quesadillas
- These quesadillas have become a family favorite and are a great meatless meal that is still full of protein and vitamins. Plus it will make its appearance on Wednesday night when the kids have church and often need to eat dinner on the go. The sweet potatoes are best when they're roasted as the recipes calls for but if you're in a hurry, you can also cook them in a instant pot.
Chicken Tortilla Soup
 - Since it is still winter, soup is always a good addition to the weekly meal plan. I save the chicken carcass from a roast chicken from Costco or the grocery store and add it to veggie scraps that I've saved to make my own chicken broth. It's a great budget saver and homemade chicken stock has a lot more nutrients than it's store bought counterpart.
