Veggie Stir-Fry

Serves: 4

4 c. fresh broccoli
3/4 c. fresh baby carrots, quartered lengthwise
2 t. oil
1 medium zucchini, halved lengthwise and sliced
1/2 t. salt
1/4 t. pepper
1/8 t. garlic powder

In a non-stick skillet or wok, stir-fry broccoli and carrots in oil for 5 minutes. Add the zucchini, salt, pepper and garlic powder; stir-fry 4-5 minutes or until vegetables are crisp-tender.
