Chicken Supreme

Serves: 6

1/2 c. dry bread crumbs
1/2 c. grated Parmesan cheese
2 t. dried parsley
1 garlic clove, minced
1/4 t. pepper
3 egg whites
6 boneless skinless chicken breast halves
Refrigerated butter-flavored spray (like I Can't Believe It's Not Butter spray)

In a shallow bowl, combine the first five ingredients. In another shallow bowl, beat the egg whites. Dip chicken in egg whites, then coat with crumb mixture. Place in a greased 13 x 9 baking dish and spritz with butter-flavored spray. Bake, uncovered, at 350 degrees for 30 minutes or until chicken juice run clear.

Tips: This recipe can easily be pared down for a smaller crowd. I cooked just 2 chicken breasts, using one egg white and a 1/4 cup of bread crumbs and Parmesan cheese.
