Oven Baked Ritz Chicken

Serves: 2

2 boneless, skinless chicken breasts
1/4 c. plain yogurt
10 whole wheat Ritz crackers, crushed into crumbs
1/8 t. pepper
1/8 t. garlic salt
1 t. Parmesan cheese

In a small bowl, combine cracker crumbs, pepper, garlic salt and cheese; spread on small plate. Dip chicken in yogurt and roll in crumb mixture. Place chicken in a greased square dish and bake, covered, at 350 degrees for 35-40 minutes or until internal temperature reaches 170 degrees.

Tips: This was a super, easy and tasty baked chicken recipe. You can use fat-free plain yogurt to cut down the fat and reduced-fat Ritz. I'm sure regular Ritz would taste fine but I liked the extra flavor that came from the whole-wheat crackers. I adapted this recipe for two chicken breasts but it can easily be doubled or tripled depending on the size of your crowd. Just bake in a larger pan and increase the baking time about 5 minutes for each additional chicken breast. I also shared this recipe at Ann Kroeker's Food on Fridays.
