Serves: 3-4
1 1/2 c. water
3 T. butter
1 package (6 oz.) chicken-flavored stuffing mix
2-3 boneless, skinless chicken breasts
1 can (10.75 oz.) cream of mushroom soup, undiluted
1/3 c. milk
1 t. parsley
Paprika
Bring water and butter to a boil in a medium saucepan; stir in stuffing mix and remove from heat. Let sit 5 minutes, then spoon stuffing into a lightly greased 2-quart casserole dish. Arrange chicken on top of stuffing and sprinkle lightly with paprika; set aside. Combine soup, milk and parsley; pour over chicken. Bake, covered at 350 degrees for 30 minutes. Uncover; bake for an additional 15 minutes or until chicken is cooked through.

Tips: This is an easy dish to put together and a kid-pleaser due to its simple ingredients. If you need to make this for a large family, just double the ingredients and use a 13 x 9 dish covered with foil. A simple vegetable on the side and your dinner is done!
