Coffee cake:
4 cups baking mix (like Bisquick)
1 1/3 c. milk
4 T. sugar
2 eggs
2 t. cinnamon
Streusel topping:
2/3 c. baking mix (like Bisquick)
2/3 c. brown sugar
1 t. cinnamon
1/4 c. butter
Stir together all ingredients for coffee cake. In a separate bowl, mix together dry ingredients for topping. Cut in butter, until mixture is crumbly. Spread coffee cake batter into a greased 9 x 13 pan and sprinkle with streusel topping. Bake at 375 degrees for 28 minutes or until toothpick inserted in the center comes out clean.

Tips: This is a yummy coffee cake if you have holiday guests or for a morning potluck. For high altitudes, heat oven to 425 degrees and add 4 T. flour to the baking mix. Use 3/4 c. milk and bake for 25 minutes. My wrist would get so tired having to "cut in" butter so I got a pastry blender from Pampered Chef.
