Serves: 4
1/4 c. butter
3/4 c. onion, chopped
1 lb. ground beef
2 cloves garlic, minced
2 T. flour
1/4 t. salt
1/4 t. pepper
1/4 t. paprika
4 oz. can mushrooms, drained
1 can cream of mushroom soup
1 c. sour cream
Hot, cooked noodles
Melt butter in large pan. Saute onions in butter until soft. Stir in ground beef, garlic, flour, salt, pepper and paprika. Cook 7-10 minutes, stirring often. Drain grease if necessary. Add mushrooms and cook 2 more minutes. Add soup and simmer 10 minutes; stirring often. Add sour cream and stir through mixture. Heat through but do not let sour cream boil. Serve over noodles.

Tips: This is an easier twist on traditional stroganoff and is one of my favorite recipes. I think I used to ask for this on my birthday as a kid. I also shared this recipe on Life as MOM's Recipe Swap.
