Chile Chicken Roll-Ups

Serves: 4

4 boneless, skinless chicken breasts
1 (4 oz.) can diced green chilies
1 c. (4 oz.) shredded cheddar cheese
1/4 c. (1/2 stick) butter, melted
1 c. crushed tortilla chips
Salt & pepper to season

Place each chicken breast on plastic wrap, flatten to 1/4-1/2 inch thickness with rolling pin or mallet and sprinkle with salt and pepper. Place green chilies and a little cheese evenly in center of each chicken breast. Carefully roll each chicken breast and secure with toothpicks. Dip each chicken breast in butter and roll in tortilla chips. Bake at 350 degrees for 25-30 minutes or until tender.

Tips: This chicken was a little messy to put together but was very tasty. I ended up sprinkling a lot of the crushed chips on top of the chicken after I had dipped them in the butter. I also shared this recipe at Diary of a Stay at Home Mom's Cooking Thursday.
