Creamy Chicken Casserole

Serves: 4

1 package (6.9 oz) chicken-flavored rice mix
2 c. cubed cooked chicken
1 c. (8 oz.) sour cream
1 c. chow mein noodles

Prepare rice mix according to package directions. Remove from heat; stir in chicken and sour cream. Transfer to a greased square baking dish. Sprinkle with chow mein noodles. Bake, uncovered, at 350 degrees for 20-25 minutes or until heated through.

Tips: When I made this I forgot to put the chow mein noodles on the casserole until near the end, thus mine were crispy and a nice added crunch in the dish. I am not sure if they would be crunch or would absorb some moisture and be soft when added at the beginning. I also shared this recipe at Harrigan Howdy's Recipe Share.
