Applesauce-Cranberry Muffins

Makes: 12 muffins

1 1/4 c. flour
1 T. baking powder
1 t. cinnamon
1/4 t. salt
1 c. Grape Nuts
1 c. skim milk
1 egg, slightly beaten
1/2 c. chunky or regular applesauce
1/2 c. packed brown sugar
2 T. butter, melted
1/2 c. dried cranberries

Mix flour, baking powder, cinnamon and salt in a large bowl. Mix Grape Nuts and milk in another bowl; let stand 3-5 minutes. Stir in egg, applesauce, sugar and butter. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in cranberries. Pour into greased muffin tins. Bake at 400 degrees for 20 minutes or until golden brown.
